What Makes Them So Addictive: The fries at Brasserie 292 are hand-cut and made from russet potatoes. They are true pommes frites, meaning they are blanched in low temperature and then dropped a second time to finish at a higher temperature peanut oil. They are then served them with a housemade garlic aioli.
