First Chipotle In Dutchess On Track For Summer Opening In Fishkill

Dutchess County's first Chipotle is set to open this summer in Fishkill at the Hudson Valley Town Center at 18 Westage Drive. A Five Guys Burgers and Fries is also being built on the site.

Construction on the 4600 building that will house the 2300 square foot restaurant is complete. Chipotle was given possession of the space five weeks ago and is doing their interior buildout,  according to David Livshin, managing agent for Dutchess Holdings, LLC, which owns the property.

Additional site work is still being done around the building, including paving, Livshin said. No official opening date has been set.

Livshin said people have been stopping everywhere he goes to ask about Chipotle.

"People are thrilled to have Chipotle here," Livshin said. "They had to drive to Danbury or Kingston." 

The Chipotle will have outdoor seating, Livshin said. Steve Ells, who founded Chipotle, is a graduate of the Culinary Institute of America in Hyde Park.
